Day 13 ... BRRR


Breakfast: Eat Like a Dinosaur ... Egg Pie


Lunch: turkey, pickle, carrots and tomatoes


Dinner: Chicken Chili (alittle bit of everything from the fridge and pantry) and a almond muffin


21dsd Almond Muffin



Preheat oven to 350 and grease muffin liners with coconut oil

2 1/2 c Almond Flour/Meal
1/4 c ground flax seed

1/4 t Salt
1/2 t Baking Soda
2 t pumpkin spice1/4 c. Applesauce
1/2 a green tipped banana2 T Coconut Oil
1 t Vanilla 


3 Eggs

- Place all ingredients in food processor and blend 
- Then add in some unsweetened coconut flakes/shredded 
- Pulse acouple more times

Bake for 20 minutes

Day 12 (Abit Hungry today)


Breakfast: Leftover pumpkin banana walnut pancakes and bacon


 Lunch: Egg Salad in romaine, spicy pickles, orange bell pepper and cherry tomatoes
*I have always disliked cherry tomatoes until now ... they are sooo sweet 


Snack: Carrot Ginger Vitamix Soup


Dinner: Halupiki Casserole (Paleo Deconstructed Stuffed Cabbage) ...

Day 11 ... Over half way there!


Breakfast: Pumpkin Pancakes topped with coconut milk, bacon and coffee
My sweet sweet husband let me sleep in this morning and made some pumpkin banana walnut pancakes ... and had coffee ready for me! I am so blessed to have him in my life. God knew we were meant for each other for sure!


Today I had the honor of co-hosting a shower for my friend Stephanie ... I made egg salad, fruit platter and cheese and crackers ... so I had some egg salad and water for lunch !!!!



Dinner: Cobb Salad ... AKA ... eat the rainbow salad

Day 10

Wonderful Saturday started out making breakfast and drinking coffee. Last night I let Matthew pick out any meal from the Eat Like a Dinosaur cookbook. He found the recipe for Kale Black Olive and Bacon Egg Pie ... I had all the ingredients except the Kale ... so we substituted spinach... and we LOVED it! The crust was alittle crumbly but who cares it was delicious ... and I mean DELICIOUS!!! I will most definitely make this again!!!

Breakfast: Spinach, Black Olive and Bacon Egg Pie



Lunch: Romaine Lettuce wraps with turkey 


My original plan for dinner was a Cobb salad ... but ya no ... when it's cold outside sometimes you just need a homey meal ... so I thought of this yummy Shepherds Pie from theclothesmakethegirl .... I did make some modifications because ya no ... I just love to tweek things ... Here is what I did alittle differently : 1/2 ground beef and 1/2 ground turkey, no tomato paste, doubled the herbs, tripled the carrots, 2 whole eggs ... check out the recipe it is great both ways!!!

Day 8 of 21 day sugar detox!

WOW ... I weighed in this morning and I am down 6lbs from last week ... I am so excited but even more for how I am feeling on the inside! I feel like a fog has been lifted ... so thankful for my friends and family who have been encouraging me.

Today is leftover day ... yippy! (I did make the guacamole fresh b/c we ate it all last time)


Menu

Lunch: Romaine wrap w/ turkey and spicy pickles 



Dinner: Leftover Fajita Fixins made into a salad 



Snack: spoonful of almond butter 

$5 Costco Rotisserie Chicken ... Pressure Cooker Stock

So yesterday I made a Costco run and ofcourse grabbed a chicken. They are so yummy and a really good deal! So I pulled the meat of the bones ... I started thinking to myself "why am I not making broth with this?" ... I looked up pressure cooker bone broth and there were tons of recipes ...

Here is what I did:

bones from 1 rotisserie chicken
2 large carrot (quartered)
1 larger onion (quartered)
5 clove garlic (smashed)
3 bay leaves
salt and pepper

Place in pressure cooker and cover it with water. Put lid on and cook til high pressure. Then cook for 20 minutes on high pressure and turn down to low for 40 minutes. Strain stock.


After I was finished I looked at those carrots ... so sad to throw them away ... but wait ...
I pulled them out added acouple of tablespoons of the broth back in and blended it into ... yep you guessed it baby food.  (John David is 3 months right now and not eating solids yet but when he is ready I will have some yummy carrots ready for him)


So what did $5 at Costco get me?



Shredding Chicken for 3 dinners
8 cups of Chicken Stock
1 cup of carrot baby food

Not bad if I do say so myself!

Day 7 .... the end of week one on 21 day sugar detox!

Week one is finished ... 2 more to go! I am so excited because I think this is just the push I needed. I can already tell that my portion size has decreased ... I am full faster now! Today was busy as are most in this crazy house ... thankful for Michael/Daddy/Superman/Love of my Life!!! He took today off and let me run to Costco as well as he ran some errands for himself later!

Day 6 ... 21 day sugar detox

Today is day six and I just can't believe how I am feeling ...

How am I feeling physically? I feel amazing, no more bloating, no more headaches, my body isn't achy or sore, I have an amazing amount of energy, my hungry is way down ... I am making myself eat instead of waiting for the next meal

How am I feeling emotionally? I'm good, I ofcourse have stress in my life ... I'm a mom and right now my sweet baby John is sick ... it just is hard to juggle the medicine and breathing treatments, while entertaining a 2.5 yr old big brother ... thankful for my 2 big boys Matthew and Issac are such troopers to be so understanding when I am taking care of John David. I am not running to food right now it's just not in my thinking. (Now last night I did really want something ... so I made a Green Monkey Shake)

Would I suggest this detox? Yes ... it has brought me from feeling like a zombie to feeling alive ... in just 6 days! I know there is more time and I may lose momentum in another week but hey I am living in the moment!

Lunch (late): Leftover chili w/ carrots and black beans

Meatloaf Recipe

1.5 lbs of ground beef
3 eggs, beaten
3 T coconut amino 
1 onion, sauteed but not overcook
1 large carrot shredded, sauteed
3 pieces of crumble bacon
1/3 c. almond meal
(Spices: salt, pepper, garlic powder, oregano, dill ... )

Day 5 dsd ... No time for breakfast

This morning started off wild ... as any house full of boys would! We rushed to get John fed, the bigs boys fed, Matthew dressed and on the bus... made a Doctors appt for John (he has had a cold/cough for acouple days) ... ran John to his appt at 9 am ... in all the crazy I skipped breakfast. Normally I try to get something in to start the day off but it just didn't happen today. I did get acouple sips of yummy coffee this morning. Never in my life would I have thought I would be drinking unsweetened coffee but I like it! * One tip that I think is key to this detox is when you make something make extra ... so when you are in a hurry or just aren't feeling like making something you have options ... since running through McDs is NOT one!


Meals for Day 5

Breakfast: Coffee with almond milk and cinnamon

Lunch: A little leftover t-day stuffing and roasted broccoli 

Snack: 1 slice turkey, 1/2 pickle and bell pepper slices 


Dinner: Chicken Fajita Cups with Simple Guacamole

(I cut up 1/3 of a rotisserie chicken and warmed it in a pan with coconut oil, garlic powder, chili powder and paprika, I also found these petite romaine lettuces at Costco ... they are so tender and delicious and perfect for filling!) 

Dessert: Green Monkey Smoothie

Day 4 21dsd ... Feeling Groovy

Today was great ... my cravings are down and I am not even finishing my plates :) Happy Dance Time! 

Meal Time:

Breakfast: L/o Sausage Stuffing with 2 fried eggs ... coffee w/ unsweetened almond

Lunch: Lettuce Boats w/ turkey, pickle and bell pepper ... with vinaigrette dip (recipe below) 

Matthew and Issac kept stealing bites of my lunch ... so then I decided to make them their own ... it really is true that your kids will eat better if you do! 

Dinner: Oh so yummy Cobb Salad 


Simple Vinaigrette Dressing

2 cups of evoo
1/2 cup of lemon juice 
1/2 cup of raw apple cider vinegar 
2 T djion mustard
1-2 minced shallots
salt and pepper
(dried herbs: basil, parsely, dill, oregano) 


*This recipe is adapted from the 21dsd cookbook ... I love this dressing because every time I make it it is different and amazing ... I change the oil or the herbs or the citrus ... this dresing can be made a thousand ways

Day 3 21DSD ... Better Day !

Today was much better than day 2 for sure! I woke up with a plan and Michael is home ... which makes everything better. Michael started me off with some coffee, fried eggs and some leftover Thanksgiving paleo stuffing ... YUMMY! I then hit the road and got all my groceries for the week at Costco and Walmart. I did switch up my original plan to make sure I use the produce up that I am getting in bulk at Costco. When I came home I sprung into action and made an amazing smoothie, got the boys down for nap and then prepped food for the week. Like I will be using baby bella mushrooms acouple times this week so I went ahead and cooked them up. Then I can add them where they are needed. Being prepared is key for me in being successful ... like making a double batch of the 21 DSD simple vinaigrette that should be enough for the entire detox.



Menu for Today 

Breakfast: 2 fried eggs over leftover Thanksgiving Paleo Stuffing
Coffee w/ coconut oil and cinnamon 



Lunch: Green Monkey Smoothie
1 frozen green tipped banana
1 large spoonful of almond butter 
1 cup ice
1 cup unswt almond milk 
2 cups fresh spinach 


Dinner: Sunshine Burger and Grilled Broccoli 


Night Cap: Coffee using the AeroPress with Almond Milk and a dash of Cinnamon

Day 2 21DSD

Well today was alittle harder than day one ... I was scrambling to find things to eat because I am waiting to go to the store tomorrow when Michael gets home (so I can go by myself). I also felt the cravings stronger today and woke up with the same headache from last night. I'm still emotionally pumped about this because warm weather is around the corner and will be here before we know it and I dont want to feel this way in less clothes ... if you know what I mean! We are also hoping on taking some beach trips this summer with friends as well as my husbands college reunion is this year (and I can't go like I am).

Meals Day Two 

Breakfast: Coffee with grassfed butter and pumpkin, A huge spoonful of almond butter 





Lunch: Leftover Chili with a Fried Egg




Snack: Macadamia Nuts




Dinner: Uncured Hot Dogs, Steamed Brocc, Mayo and Mustard Dip

21 DSD Day One ... Just couldn't wait!

Well I started today ... 2 days earlier than planned.  I still have not stocked my fridge and freezer for the week but I think I can get two days of 21DSD friendly meals for the next 2 days out of what I have on hand. I just could not stand to feel the way I have been feeling ... tired, sore, achey, emotional, out of control, weak and moody. So here we are ... Matthew's first day back to school and my 1st day on the detox. I am planning on also working on my sleep during the next 21 days. Research has shown and I can prove that we eat when we are tired ... as a mother of 3 boys (5, 2 and 3 months) I am always tired ... therefore I am always hungry.

Meals Today:

Breakfast: Hot Lemon Water and 3 Eggs in bacon fat


 Lunch: Chili with Carrots


Dinner: Beef Stew (Pressure Cooker Style) 

Snacks: 1/2 green apple (Not Pictured) 

* Tonight I experienced a headache that would not go away ... could have been the start of the detox or the fact that Issac was having a hard time falling asleep bc of "monsters" and I am on single parent duty since daddy is traveling for work.
