Curry Lentils with Spinach

2 c. lentils
5 cups chicken stock

bring to a boil and then simmer for 10 minutes

add:

5 carrots, chopped

continue to simmer for 15 more minutes

add:

1 can full fat coconut milk
fresh ginger
3 cloves garlic minced
salt and pepper to taste

simmer for another 5 min

add:

4 cups of fresh spinach
2 cups cooked brown rice
